Manner Monday®: Watermelon Salsa

I LOVE salsa!  I love Cranberry Salsa.  I love Black-Eyed Pea Salsa.  If you can make it into a salsa… I’m all over it.  With summer in full swing and watermelons greeting you at the front door of the grocery store, I searched for Watermelon Salsa recipes and came up with this variation that was a hit at our neighborhood Memorial Day party recently.  I received a few requests for the recipe so I’ve put it together for you here!

Ingredients:

  • Watermelon – chopped into bite sized pieces.  I used half of a watermelon and it made PLENTY.
  • Red Onion – diced.  Use as much as you want! I used half of an onion.
  • Bell Peppers – diced.  I like color, so I used one of each; yellow, orange, green (3 total).
  • Jalapeno – diced.  I like my salsa spicy so I used two.
  • Cilantro – chopped.  Use as much or as little as you’d like.
  • Juice from two limes.  Or cheat and use lime juice from the bottle like I did since I somehow forgot the real limes at the store :-/
  • Salt

Chop, slice, dice, and mix everything.  Let it sit in the fridge for awhile so all of the flavors can meld and do their thing.  Eat with a spoon, or scoop it with a chip.  Either way, it’s a refreshing and delicious summer treat.  What would you add?  Do you have a good summer recipe you’d like to share?  I’d love to try it!
